Soy Como Soy is a Nikkei Izakaya and Speakeasy-style Cocktail Bar. With a Bar programme designed by Drinks India Company that focuses on a lot of Japanese – Peruvian fusions, their menu is a very unique one. The use of recycled, upcycled, locally sourced ingredients adds a more authentic flavour to their cocktails. Being a Japanese restaurant, their consumption of ginger is high and they use the leftover Pickled Ginger Brine in their cocktail, the Chilcanito. Similarly, leftover Ume fruit, from which Choya is derived, is infused with Japanese whiskey and used in the cocktail UmeMarron. The use of these ingredients more effectively and sustainably has not just helped them develop a cocktail menu that tastes great but has helped them reduce their carbon footprint as a brand.
