At Windmills, it’s about a celebration of ingredients that may be common but less appreciated, like a good locally sourced jackfruit at the peak of its season or using the season’s best Jamun to stir a mystery cocktail or even create the bar’s signature Bloody Mary, fat washed with sardine and wasabi.
Their focus is on keeping their cocktails as sophisticated as possible and yet easy to approach and use the freshest ingredients, contemporary glassware, and modern and traditional techniques to concoct their drinks.
The bar menu is in constant evolution – there is a story to be told every month, based on which ingredients are chosen, preferably those in season and what’s trending around the world. Windmills’ philosophy is that if a cocktail is on the menu it doesn’t mean that it can’t be improved, the work on it must go on.
